The ultimate air fryer guide: recipes, technique & everything you need to know (2026)

Who should read this guide

You're in the right place if you:

  • have bought an air fryer and aren't yet getting the most out of it,
  • want to buy an air fryer and aren't sure whether it's worth it,
  • always make the same things in your air fryer and need fresh ideas,
  • are looking for specific cooking times that actually work,
  • or want to know how AI tools can transform the way you use your air fryer.

This guide is the central hub: over 2,500 words, organised into 12 sections, with links to specialised articles on every detailed topic.

1. What actually is an air fryer — and what isn't it?

The term “air fryer” (in German: Heißluftfritteuse, literally “hot-air deep fryer”) is misleading. The appliance doesn't fry in the classic sense — that is, not in a bath of oil. Instead, it works like a compact fan oven: a heating element produces hot air, and a powerful fan circulates it at high speed through the cooking chamber.

The effect: food turns crispy on the outside as if it came out of a deep fryer, without having to bathe in oil. 1–2 teaspoons of oil are enough for most dishes. Fatty foods (chicken thighs, bacon) need no oil at all — their own fat is enough.

What an air fryer is NOT:

  • Not a microwave: it needs real heat, not radiation.
  • Not an oven replacement: small cooking chamber (5–8 litres), portions for 4 people at most.
  • Not a miracle machine: poor for soups, sauces, rice and pasta (see section 8).

In 2026, 47 % of German households own an air fryer — and 65 % of owners use it at least once a week (YouGov 2026). That makes it the fastest-growing kitchen appliance of the past decade.

2. Why an air fryer? The 5 advantages

2.1 Saving electricity

A 6-litre air fryer uses about 0.7 kWh for 30 minutes at 200 °C. An oven with an 80-litre cavity needs 2–2.5 kWh for the same dish — 3 to 3.5 times as much. For a family that cooks every day, that adds up to €100–200 a year in savings.

2.2 Speed

Preheating time for an air fryer: 2–3 minutes. Oven: 10–15 minutes. With frozen products the difference disappears altogether — straight in, done in 12 minutes.

2.3 Healthier

Less oil = fewer calories. Chips from the deep fryer: ~290 kcal / 100 g. Chips from the air fryer: ~165 kcal / 100 g — 43 % fewer calories with a similar taste.

2.4 Versatile

With the right understanding you can make almost anything in an air fryer: meat, fish, vegetables, baked goods, sweets, even whole meals in stages. The temperature chart lists 50+ foods with the right settings.

2.5 No smell in the flat

The smell of deep-frying clings to the curtains for days. An air fryer is enclosed, has a filter and gives off hardly any smell. Especially valuable in rented flats without an extractor hood.

3. Buying the right air fryer

Capacity: how big is big enough?

  • 2–3 litres: singles or couples, small portions, more snack-sized.
  • 4–5 litres: the standard for a couple or a small family. Enough for 4 chicken legs.
  • 6–8 litres: family of 3–5, whole chickens possible.
  • Dual basket (e.g. Cosori Dual 8.5 L): two dishes at once — a game-changer for complex menus.

Features that really matter

✅ Digital display: more precise temperature setting than a dial. ✅ Preheat function: saves manual timing. ✅ Non-stick coating: makes cleaning 10× easier. ✅ Maximum of at least 200 °C: some budget models only go up to 180 °C, which isn't enough for crispy results. ✅ Dishwasher-safe basket: according to the manufacturer — but better to wash it by hand anyway (see section 9).

Features that are just marketing

❌ “Wi-Fi app control”: nobody needs it. The appliance is in the kitchen. ❌ “Self-cleaning”: doesn't work as well as 30 seconds with a dishcloth. ❌ “30 presets”: you'll use five of them and ignore the rest.

Price range

  • €80–120: solid entry-level (Tristar, Tefal Easy Fry).
  • €150–250: premium class with dual basket or high capacity (Cosori, Ninja).
  • €300+: professional-grade appliances (Ninja Foodi, Philips Premium) — only worth it with daily use.

4. First steps with your new air fryer

Detailed tips for the first week are in our article 10 air fryer tips for beginners. The short version:

  1. Empty run: on first use, run it for 10 minutes at 200 °C with nothing inside — the plastic smell from the coating disappears.
  2. Oil the inside of the basket: brush on 1 tsp of oil — the first 10 dishes will release more easily.
  3. Start with frozen chips: a learning exercise with minimal risk.
  4. Buy a thermometer: €8–15 for a digital kitchen thermometer. It will become your best friend for meat.

5. The key cooking techniques

5.1 Preheating (or not)

Preheating shortens the effective cooking time by 2–4 minutes and makes the result more even. Always preheat when:

  • you're cooking fresh (not frozen) food,
  • you want a crispy texture,
  • you're cooking meat.

You can skip preheating for:

  • frozen products (chips, fish fingers, nuggets),
  • baked goods that should rise slowly.

5.2 Shaking vs. turning

  • Shaking = small pieces, lots at once (chips, broccoli florets, diced vegetables). Faster, more even.
  • Turning = large pieces, one by one (chicken breast, fish, steaks). Easier to control precisely.

Use silicone tongs for turning — otherwise the coating suffers.

5.3 Oil — how much is right?

  • Frozen products: 0–1 tsp. They're often pre-oiled already.
  • Fresh, lean foods (vegetables, chicken breast): 1–2 tsp of oil per person.
  • Fatty foods (chicken thighs, skin-on salmon, bacon): NO OIL AT ALL. Their own fat is enough and makes everything crispier.

Oil trick: instead of pouring oil straight from the bottle, buy a pump spray bottle (€5–10). You'll spread it more evenly and use 50 % less oil.

5.4 Avoid stacking

Hot-air circulation is the heart of the appliance. If pieces of food cover each other, only the top layer cooks. A single layer, with small gaps between the pieces — that's the golden rule.

If you want to cook more: two batches. The second one is faster (the appliance is already hot).

5.5 Core temperature instead of cooking time

For meat over 200 g, cooking time alone is unreliable — too many variables. An €8 thermometer eliminates the guesswork:

Meat Core temperature
Chicken / turkey 75 °C (non-negotiable — salmonella)
Pork medium 70 °C
Pork slightly pink 65 °C
Beef rare 50 °C
Beef medium-rare 55 °C
Beef medium 60 °C
Beef well-done 70 °C
Lamb medium 60 °C

6. Temperature & cooking time — the key values

You'll find a complete list of 50+ foods in our air fryer temperature chart — here are the top 10 for everyday cooking:

Food Temperature Time Note
Chips (frozen) 200 °C 12–15 min shake after 8 min
Chicken breast (200 g) 180 °C 18–22 min check core temperature 75 °C
Sweet potato fries 200 °C 15–18 min turn after 9 min
Broccoli florets 200 °C 8–10 min shake after 5 min
Salmon fillet (200 g) 180 °C 8–10 min don't turn (falls apart)
Steak (2 cm, medium) 200 °C 8–10 min turn after 5 min
Camembert (whole) 170 °C 8–10 min don't turn, in baking paper
Crisping up bread rolls 180 °C 4–6 min don't turn
Frikadellen (German meat patties) 180 °C 14–16 min turn after 8 min
Brussels sprouts, halved 200 °C 12–15 min shake after 7 min

Oven-to-air-fryer conversion: temperature −20 °C, time −25 %. Example: 200 °C / 30 min in the oven → 180 °C / 22 min in the air fryer.

8. What does NOT belong in the air fryer

Some dishes simply don't work — leave them out deliberately:

  • Runny batters & soups — they leak out.
  • Cheese on its own (open cheese on toast) — gets blown around by the fan.
  • Leafy greens (spinach, rocket) — fly straight out and burn.
  • Rice without a container — the grains block the air vents.
  • Pasta — no way to add enough water, it turns tough.
  • Pancakes without a mould — the batter runs everywhere.
  • Beer-battered foods — the batter comes away in the hot air.

9. Cleaning & care

A neglected air fryer starts to smell after three weeks. The maintenance routine:

After every use (2 minutes)

  1. Take out the basket and wash it in warm water with washing-up liquid and a soft sponge.
  2. Wipe the interior (the upper area, where the heating element sits) with a damp cloth.
  3. NEVER in the dishwasher — the coating gets scratched.

Weekly (5 minutes)

Remove the outlet filter (usually at the back or top of the appliance) and rinse it under warm water. If it's heavily greased, use a little washing-up liquid.

For stubborn smells

Put 500 ml of water + 50 ml of household vinegar in the basket and run it for 5 minutes at 200 °C. Dry once it has cooled down.

Common cleaning mistakes

  • ❌ Using a wire brush — scratches the non-stick layer.
  • ❌ In the dishwasher — see above.
  • ❌ Cleaning while the appliance is still hot — thermal shock can make the coating crack.

10. Common mistakes and how to avoid them

Mistake 1: Not preheating enough

Symptom: dull on the outside, perfect inside — no crispy layer. Solution: always preheat for 2–3 minutes with fresh food.

Mistake 2: Overloading

Symptom: some pieces crispy, others soft/soggy. Solution: one layer at most. Better two batches.

Mistake 3: Wrong temperature

Symptom: burnt outside, raw inside (too hot) or grey and soft (too cold). Solution: consult the temperature chart.

Mistake 4: Forgetting to shake

Symptom: one side crispy, the other not. Solution: for chips/cubes, shake at 50 % of the cooking time. For steaks: turn.

Mistake 5: Liner paper blocking the air circulation

Symptom: cooking times far longer than expected. Solution: use baking paper only as a small piece under the food — NEVER line the whole basket. Use special perforated air fryer baking paper.

11. When an air fryer is NOT worth it

In the interests of fairness — when an air fryer isn't a good buy:

  • You cook less than twice a week. It doesn't pay off financially.
  • You're a small single-person household who eats out every day.
  • Your kitchen has no room — the appliances need a 40 × 40 cm footprint.
  • You mainly cook soups / stews / rice dishes. Those aren't the air fryer's strengths.

In these cases, a combination microwave with convection (e.g. Panasonic NN-CS894S) is the better investment.

12. Where AI comes in

Standard recipe books say: “200 °C, 15 min.” But your appliance has 5 litres and a different heating element from the one in the book. The result: standard values are often off by 10–25 %.

This is where AI tools like KI-Kochhilfe help:

  1. You switch on air fryer mode — once in the generator, from the Standard plan (and already in the free trial).
  2. Every generated recipe comes with air fryer temperature, cooking time and turning steps — instead of oven values you have to convert yourself.
  3. Your allergens and exclusions are remembered by your profile (from Standard) — no need to re-enter them for every recipe.

Bonus feature: you can type in “I have leftovers of …” and the AI turns what's actually in your fridge into a fitting air fryer dish. No generic chips variant for the 10th time.

Frequently asked questions

Is an air fryer worth it for 2 people?

Yes, if you cook twice a week or more. A 4–5-litre appliance is perfectly sufficient.

What air fryer size for a family of 4?

At least 6 litres. Ideally a dual-basket model (e.g. Cosori Dual 8.5 L) — that lets you cook the main and the side dish at the same time.

Can you bake bread in an air fryer?

Small rolls, yes; whole loaves (over 500 g), no — they don't rise evenly because the cooking chamber is too small.

Which oil is best for the air fryer?

Rapeseed oil for standard use (high smoke point, neutral taste). Olive oil for Mediterranean recipes. Sesame oil for Asian ones. At temperatures above 200 °C, no walnut or linseed oil — they smoke.

How long does an air fryer last?

With normal care, 5–8 years. Most common faults: heating element (can be replaced), display (often not replaceable). Appliances under €100 typically last 2–4 years.

Can you make jam on toast in an air fryer?

Toast, yes; jam on toast, not really — the jam runs off and burns on the bottom. Better to spread the jam on after toasting.

What happens to food quality with frequent air fryer use?

Studies show mixed results: some find less acrylamide (a potentially carcinogenic substance from heavily browned starchy foods) in the air fryer than in deep-frying, others find more. What matters is the degree of browning — cooking to golden rather than dark brown reduces acrylamide formation, whether in an air fryer or a deep fryer.

Are an air fryer and an oven enough, or do I also need a combi oven?

For 95 % of households: yes, an air fryer + an oven are enough. Combi ovens are really only relevant for professional bakers and chefs.
